The Ancestral Table Immersion is a three-day, hands-on journey into the timeless relationship between land, animal, and human. Together, we’ll witness the harvest of an animal and honor its life through the art of whole-animal butchery. You’ll learn ancestral techniques for transforming every part—hide to bone, tallow to sinew—while gaining a deeper appreciation for the circle of life that nourishes us.
This is not simply a butchery workshop. It’s an invitation to reconnect fully with ancient traditions, to understand food at its source, and to experience the reverence and gratitude that come with eating in full awareness.
